- 1 ripe avocado, pitted and peeled
- 1 cup fresh pineapple chunks
- 1/2 cup coconut milk (unsweetened)
- 1/2 cup coconut water
- 1/2 cup baby spinach
- 1 tablespoon honey or maple syrup
- 1 tablespoon chia seeds
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon lime juice
- A handful of ice cubes
First, you need to halve the ripe avocado and take out the pit and then transfer the avocado meat to a blender. Spoon in the fresh pineapple chunks.
Pour in the coconut milk and the coconut water if you are using any pour in the baby spinach if you are using any.
For the sweet element stir in honey or maple syrup. Finally, add the vanilla extract and lime juice to add on the tropical flavor of the cake.
Pour in the chia seeds into the blender and toss it all around.
Place the mash into an ice cream maker and blend in a few handfuls of ice cubes mixing at high speed. If, however, the smoothie gets too thick, more coconut water can be put as to achieve the right texture.
